Try our semolina pasta made from premium semolina flour, which is milled from the heart of durum wheat and has been a staple in traditional Italian pasta for centuries. Sfoglini was founded in Brooklyn in 2012. Since then, the operation has expanded while staying true to our commitment to quality ingredients and traditional pasta-making techniques. In 2018, Sfoglini moved our operations to Coxsackie, New York, a Hudson Valley town.
Pasta Your Sauce Will Stick To
Sfoglini pasta is made using a time-honored Italian technique known as the bronze-die method. This helps create the signature shapes of each piece of organic whole grain pasta or semolina pasta. It also contributes to a rough, textured surface that holds more sauce. Equally importantly, we slow dry our pasta at low temperatures over many hours, another classic Italian technique that preserves the flavor, nutrients and authentic taste of Sfoglini products.
