Taste delicious pastas approved by one of the top culinary voices with The Sporkful Collection at Sfoglini. Developed in collaboration with three-time James Beard Award winner Dan Pashman, creator and host of The Sporkful Food Podcast, and inventor of CASCATELLI (Italian for "waterfalls"), the Sporkful Collection maximizes the three qualities by which Dan believes all pasta shapes should be judged:
Whether you want to improve on some of your favorite recipes or experience innovative pasta shapes, you'll love this collection from Sfoglini.
Fantastic Flavors and Textures
The Sporkful Collection is made from durum semolina flour, a staple in traditional Italian pasta for centuries. Durum semolina is key to creating pasta that holds its shape and delivers the essential al dente texture for a better bite.
Like other types of Sfoglini pasta, our Sporkful pasta shapes are noted for their ability to "hug sauce." We use a time-honored Italian technique called the bronze-cut method to help create innovative shapes in this collection. This gives each piece of pasta a rough, textured surface that holds more sauce in every bite.
Finally, we slow dry our pasta at low temperatures for over nine hours. This process preserves the exquisite flavor, healthy nutrients and authentic taste that sets our pastas apart.
What Is Cascatelli Pasta?
Dan Pashman is passionate about pasta, and his three-year quest to create the perfect pasta shape was realized with the release of cascatelli in 2021. This is an entirely new pasta shape that was developed exclusively with Sfoglini, and it became an instant hit. Pashman's story about the creation of cascatelli was chronicled on his podcast in a series called "Mission: ImPASTAble."
Cascatelli pasta is one of three pasta shapes included in The Sporkful Collection. You'll also find quattrotini, a Sicilian pasta shape served during the carnival period, and Vesuvio, which resembles the swirling, spiraling contours of the volcano Mount Vesuvius.
