Meet Vesuvio, brought to you by the artisans at Sfoglini and Dan Pashman, three-time James Beard Award-winner and creator and host of The Sporkful food podcast. This unique pasta mimics the swirling, spiraling contours of the volcano Mount Vesuvius in Naples, Italy.
Vesuvio’s ridges and spiral shape create multiple surfaces where the sauce can cling, ensuring that each bite is bursting with flavor. Like all Sfoglini pasta, it has also been bronze die extruded, a process that imparts a rougher surface texture that holds onto sauce.

This pasta is made with durum semolina flour, a staple in traditional Italian pasta for centuries. Durum semolina helps to create pasta that holds its shape and delivers the essential al dente texture for a better bite.

I didn't think I'd love these when I first tried them...was just curious. Now, next to Cascatelli, they are a favourite of mine and those with whom I've shared meals that included this pasta. Love everything about it; taste, texture, how it holds sauce...this unassuming, tiny mountain of pasta is worth trying if you've not!
Since ordering this a few months ago, it's become my favorite shape. It holds sauce wonderfully, is a nice sized bite, and has some heft to it. I hope Sfoglini keeps it around, I hadn't noticed how much a pasta shape can affect the meal until I tried vesuvio.

I had never seen or heard of these noodles but saw them on a news show as a "deal" so bought them to give them a try and SO glad I did!! They are delicious, hearty and wonderful plain or with sauce or food. I only ordered the Vesuvio and they are thick and stay on a fork. They have great protein and fill you up!! I love noodles and these are one of the best I have ever had!!
