We’re thrilled to bring you Quattrotini, a unique pasta shape with Sicilian roots. Quattrotini was developed by the pasta artisans at Sfoglini in collaboration with Dan Pashman, a three-time James Beard Award winner and creator of The Sporkful food podcast.

This Sicilian pasta shape is served during the carnival period, when legend says the Devil uses it to tempt residents with the sin of gluttony. Quattrotini’s irresistible texture and flavor make it easy to imagine how tempting it can be to overindulge!

Quattrotini exhibits the three qualities by which Dan believes every pasta shape should be judged:

  • Sauceability: How readily sauce adheres to the shape.
  • Forkability: How easy it is to get the shape on your fork.
  • Toothsinkability: How satisfying it is to sink your teeth into it.

Multiple ridged tubes and the surface texture achieved through bronze die extrusion help sauces cling to each bite of Quattrotini. Made with durum semolina flour, a staple in traditional Italian pasta for centuries, this pasta holds its shape well and delivers that perfect al dente bite.

Exactly right

I bought the quattrotini to make a recipe in Pashman's book Everything is Pastable. The package says that this is the pasta that the devil uses to tempt people into the sin of gluttony, and it totally did! The recipe was fantastic, and while it does offer some alternative pastas, I'm extremely happy I went for the quattrotini. It was exquisite.

A pantry gourmet staple

One of our favorites! A delicious pasta that compliments a wide variety of recipes. We always have several in the pantry.

It's true! Quattrotini gives Cascatelli a run for its money. This pasta is incredible.

Visually it is amazing -- it's unlike any pasta shape I've ever had. (although that said, it is basically like a magical stack of bucatini, and I have seen bucatini.) The chewiness is insanely good. It holds so much sauce!! It's very easy to get onto your fork. Also key: it is absolutely delicious. I cooked it for the full 12 minutes and it's delightfully al dente. Really, truly, I highly recommend this pasta. What are you waiting for? Order some Quattrotini!!

This organic and pure durum pasta holds up so well - perfect for leftovers if you have them. Best pasta I have ever had!
