Three-time James Beard Award winner Dan Pashman, creator and host of The Sporkful food podcast, presents Cascatelli. Translating to “waterfalls” in Italian, Cascatelli features wavy ruffles along a curved, half-tube shape.

Launched in 2021 after three years of development with Sfoglini, this award-winning pasta maximizes three qualities:

  • Sauceability: How readily sauce adheres to the shape.
  • Forkability: How easy it is to get the shape on your fork.
  • Toothsinkability: How satisfying it is to sink your teeth into it.

Each feature of Cascatelli was thoughtfully designed to bring about these perfect pasta qualities. For example, the ruffles and half-tube shape capture more sauce in every bite, and the variations in textures create a more exciting sensory experience. Additionally, Cascatelli is made using a bronze die extrusion process that creates a rougher surface for the sauce to cling to.

Amazingly Better than Trader Joe’s

We’ve been a fan of Cascatelli for years. I recently ran out and grabbed a bag of Cascatelli at Trader Joe’s….it was a huge mistake! Their brand fell apart when cooking and the pasta didn’t hold its shape and made the sauce soupy. Never again! I’m going back to Sfoglini Cascatelli. It’s amazingly good.

It is actually the best pasta, ever

I wanted to believe the hype, and I'm so glad I did--it is actually the best pasta I've ever had. It's just a miraculous shape. The way it holds onto olive oil, to sauce, pesto, Bolognese, cheese, you name it; the way it's so hearty and toothsome but so easily sits on the fork, and even holds up in soup. It's wild. The only problem with it is how good it is--I'm going to go up a pants size. Absolutely incredible.

Interesting pasta

It does what it says it does. It holds sauce it has texture, and is kinda pretty. I don’t know what other people are talking about it taking long to cook… it’s pasta, it has to cook for sometime. It’s thick but not too thick. I only gave it 4 out of 5 because one box was damaged upon arrival. I would buy it again on sale and free shipping
