Cavatelli

A Southern Italian Treasure Crafted for perfect bites

Discover a classic pasta made to the highest standards with our Sfoglini Cavatelli. A staple in Italian cuisine, Cavatelli originated in Southern Italy. Its name comes from the Italian word “cavare,” meaning “to hollow out” or “to carve.” The shape’s design, with its grooves and hollow center, makes it ideal for capturing sauces because the ridges cling to thick textures, while the hollow center traps smaller ingredients like meat or vegetables. This ensures every bite is flavorful and evenly coated.

Our Cavatelli is bronze-die extruded and slow-dried, which adds a rough texture to the surface that “hugs sauce” effectively. The shape’s design, with its grooves and hollow center, makes it ideal for capturing sauces because the ridges cling to thick textures, while the hollow center traps smaller ingredients like meat or vegetables. This ensures every bite is flavorful and evenly coated.

At Sfoglini, we make our pasta with premium organic semolina flour. Milled from the heart of durum wheat, this type of flour has been a staple in traditional Italian pasta for centuries and helps to create pasta that holds its shape and delivers the perfect al dente bite.

Cooked in the instapot on the recommended pasta times of cut boil time in half, and sauced with a pesto. Turned out great. Instapot worked well for cavatelli.

We love these products and especially the cavatellis. We serve them pesto, tomato sauce, and have put them in soup.
